👩🍳 How to Make Homemade Vanilla Sponge Cake
Step 1 – Preheat the Oven
Preheat your oven to 180°C for 10 minutes.
Meanwhile, prepare the cake batter.
Step 2 – Cream the Sugar and Oil
Take a large mixing bowl and add the powdered sugar and cooking oil.
Using a hand whisk, beat the mixture continuously for approximately 10–12 minutes. If using an electric beater, around 4–5 minutes should be sufficient.
Continue until the mixture becomes lighter in color and slightly fluffy.
Step 3 – Add Curd and Vanilla
Add 2 tablespoons of curd and whisk for about 30 seconds.
Now add 1/2 teaspoon vanilla essence and mix well.
Step 4 – Sift the Dry Ingredients
Place a sieve over the mixing bowl.
Add:
- 250 g maida
- 1/4 tsp baking soda
- 1¼ tsp baking powder
- 2 tbsp milk powder
Mix the dry ingredients lightly while they are still in the sieve and then gently sift them into the wet mixture.
This helps remove lumps and distributes the raising agents throughout the flour.
Step 5 – Prepare the Cake Batter
Using a spatula, begin combining the wet and dry ingredients.
Add warm milk little by little, mixing between additions.
Do not pour all the milk at once. Continue adding only as much as required to obtain a smooth, flowing cake batter.
Mix until everything is properly combined and there are no visible lumps.
Step 6 – Prepare the Cake Tin
Grease your cake tin with a little cooking oil using a brush.
Cut parchment paper according to the size of the base and place it inside the tin.
Pour the prepared batter into the cake tin.
Gently tap the tin about three times on the counter so the batter settles evenly.
Step 7 – Bake
Place the cake tin in the preheated oven, on the third shelf, and bake at:
180°C for approximately 20 minutes.
After 20 minutes, insert a clean sharp knife into the centre of the cake.
If wet batter sticks to the knife, bake for approximately 5 minutes more and check again.
Ovens can vary, so use the knife test rather than depending only on the clock.
When the knife comes out clean, your vanilla cake is ready.
Step 8 – Cool and Remove from the Tin
Remove the cake from the oven and allow it to cool for approximately 5 minutes.
Carefully run a knife around the sides of the cake.
Place a plate over the cake tin and turn it upside down. Remove the tin, then use another plate or serving tray to flip the cake back to its correct side.
Your homemade soft vanilla sponge cake is ready!
⭐ Important Tips for a Soft Vanilla Cake
-
Add the milk gradually because the exact amount required can vary.
-
Cream the sugar and oil properly; don't rush this step.
-
Preheat the oven before putting the cake inside.
-
Sifting the flour, baking powder and baking soda helps produce a smoother batter.
-
Once the dry and wet ingredients are combined, avoid unnecessarily overmixing the batter.
-
Don't repeatedly open the oven while the cake is baking.
-
Because ovens behave differently, start checking your cake around the stated baking time rather than assuming every oven will take exactly the same time.
-
Let the cake cool briefly before removing it from the tin so it doesn't break apart.
